Basic Cooked Berry Jam

Pectin Free

Ingredients

  • 3 cups crushed fruit
  • 2 tablespoons lemon juice
  • 1 - 6 ounce can of frozen, unsweetened apple juice conentrate or frozen unsweetened white grape juice concentrate
  • 1/2 cup Ultra Gel instant thickener

Directions

  1. Allow frozen concentrate to thaw.

  2. Combine crushed fruit, lemon juice, and frozen concentrate.

  3. Bring to a full boil over high heat, stirring constantly until smooth.

  4. Remove from heat and sprinkle in Ultra Gel, stirring continuously with a wire whisk until smooth.

  5. Return to heat and boil 1 minute, then remove from heat.

  6. Immediately ladle into jars, filling to within 1/2 inch of top.

  7. Affix lids and tighten securely.

  8. Place in pre-heated bath and process for 35 minutes after water boils.

  9. Yields about 2 pints ( 64 - 1 tablespoon servings )
